- 1 cup coconut cream
- 6 soft dates ex medjool. or ⅓ cup ready date paste.
- 3 tablespoon cocoa powder
- Toppings: fruits berries, dark chocolate decorations, etc..
Pit your soft dates, put them in a small food processor together with 2 tablespoon of the coconut cream. Mix into a smooth paste. If it is difficult to mix this small amount, use a hand mixer or make a bigger batch of date paste.
Use coconut milk can that has been in the fridge overnight. Use the thick creamy part of the coconut. Whisk the coconut cream as cold in a bowl for a couple of minutes. This does not become fluffy as cream but a little airier.
Add the date paste and cocoa powder and whisk even. Portion the dessert to glasses. Place in the fridge until serving.
Decorate with preferred toppings.
This amount becomes 2 big portions or 4 small portions. The mousse is quite chocolaty and filling, so a smaller amount is often enough, especially if served with toppings.
As for toppings, you can use berries or fruits, coconut flakes, or dark chocolate decorations.
