Cinnamon Raisin Granola

Ingredients
  

  • cup large rolled oats
  • ¾ cup raisins
  • ¼ cup water
  • ½ cup pecan nuts
  • 2 teaspoon ceylon cinnamon
  • 1 teaspoon finely ground cardamom
  • ¾ cup large coconut flakes

Instructions
 

  • Start by blending half of the raisins and the water into a paste. Use an immersion hand mixer or food processor. 
  • Add the spices to the mixture.
  • Chop the nuts into smaller pieces
  • Mix the oats, chopped nuts and raisin paste. Spread evenly on a baking sheet.
  • Bake in the oven at 350F ( 175C) for 20-30 minutes. Stir around a couple of times. 
  • When cooled down add the rest of the raisins and the coconut flakes. 

Notes

Store at room temperature in a conntainer. To make it gluten free, use gluten-free rolled oats. 
Nutrition for one serving: 220 calories, 11 grams fat, 22,4 grams carbs, 5,4 grams fiber, 4,7 grams protein.
